Coffee cakes cookies

COFFEE CAKES COOKIES 

 Soft cookies with a cozy cinnamon, a touch of coffee and a sweet crumble topping, baked into a cookie πŸͺ☕πŸ’›.

Welcome to my little corner of sweetness πŸ’› Since it's fall, for my very first recipe, I wanted to share something that feels like a warm hug  these Coffee Cake Crumble Cookies. They’ve got everything I love in one bite: soft, buttery dough, a cozy swirl of cinnamon sugar,a touch of coffee and that golden crumble on top that melts in your mouth.

They’re perfect for slow mornings, rainy afternoons, or when you just need a sweet moment with your coffee ☕✨

Ingredients: 

🧁 For the cookies:

  • 115g melted butter 🧈

  • 200g brown sugar 🍯

  • 2 eggs πŸ₯š

  • 110g plain yogurt (or sour cream)

  • 80ml buttermilk (or milk + 1 tsp vinegar) πŸ₯›

  • 1 tsp vanilla extract ✨

  • 240g all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt πŸ§‚

  • 1 tbsp ground cinnamon 🌸

  • 1 tbsp instant coffee (or espresso powder ☕)

     

    🍰 For the crumble topping:

  • 75g brown sugar

  • 60g melted butter

  • 100g flour

     

     πŸŒ€ Instructions:

    1. Preheat & Prep

    Set your oven to 180°C (350°F).
    Line a baking tray with parchment paper and set aside. 

    2. Mix the Base

    In a large bowl, whisk melted butter and brown sugar until smooth.
    Add eggs, yogurt, buttermilk, and vanilla stir until creamy.

    In another bowl, mix flour, baking powder, salt, cinnamon, and coffee powder.
    Combine dry ingredients with the wet mixture and stir gently until a thick, soft batter forms.

    4. Make the Crumble

    Combine sugar, melted butter, and flour until crumbly  like soft sand 🧁✨then put it in the freezer for about 10 minutes.

    5. Assemble

    Scoop cookie dough onto tray, make a whole in the middle of the cookie dough.
    Finish with an amount of thr crumble till it's good filling.

    6. Bake

    Bake 12–15 minutes or until golden around the edges.
    Cool for a few minutes  the crumble will crisp up beautifully ✨
